2 medium zucchini
2 medium yellow squash
1/2 cup pine nuts
4 cloves garlic
1/2 cup cilantro
1/2 cup basil, fresh
2 Tbs lemon juice
3 Tbs Nama Shoyu, or salt to taste
2 cups tomatoes, coarsely chopped

| Use spirooli, saladacco, or vegetable peeler to shave zucchini &
yellow squash into fettucini - like ribbons. Puree pine nuts, garlic, cilantro,
basil, lemon juice, Nama Shoyu, and pinch of salt in food processor until smooth.
Add tomatoes and pulse until blended. Toss squash & zucchini with pesto. Season
with pepper, and serve. |
