2 cans black beans, rinsed and drained
1/3 cup lime juice, freshly squeezed
1/2 cup olive oil
1 clove garlic, minced
1/8 tsp cayenne pepper
1 1/2 cups corn kernels
1 small red bell pepper, chopped
2 med. tomatoes, chopped
6 green onions, chopped
1 hot chili peppers, seeded and minced
1 avocado, peeled and chopped
1/2 cup cilantro, coarsely chopped

Rinse and drain beans.
Put lime juice, olive oil, and cayenne in a small jar, cover with lid and shake
until ingredients are well mixed. |

In a salad bowl,
combine beans, corn, avocado, bell pepper, tomatoes, green onion, chili pepper, and
cilantro. Shake the lime dressing and then pour over the salad. Stir until well
coated. Refrigerate and adjust seasonings before
