Zucchini Pasta Salad (Raw Dish)
2 Roma Tomatoes, diced
1 Red Bell Pepper, chopped
2 ribs Celery, diced
2 Carrots, diced
2 green onions, diced or 1/4 red onion sliced thinly
2 large zucchini, spiral sliced
2 large yellow summer squash, spiral sliced

Dressing:
1 avocado
1 roma tomato
1 stalk celery
1 lime juiced

Blend dressing and set aside. Using spirooli or other spiral slicer, slice zucchini and yellow squash into "pasta" spirals (suggest that you then cut these into smaller spirals). Mix all vegetables together, then mix dressing into salad.

Serve alone, over a bed of greens, or wrapped in romaine lettuce or collard greens. This is really good with freshly made salsa over top, yummy! You can also substitute some of the salsa instead of the diced Romas in the salad part of the recipe and in the dressing part of the recipe for a little more kick.

Another option is to add fresh basil or fresh cilantro to the dressing (I use a personal blender to blend the dressing)
