Black Bean Soup
1 medium onion, chopped
4 cloves garlic, minced
1 Tbs ground cumin
1 tsp crushed red pepper
2 Tbs olive oil
4 cans Black beans, (16 oz)
2 cups chicken style broth
3 cups salsa
2 Tbs lime juice
In a 4 qt sauce pan, cook onion, garlic, cumin, & red pepper flakes in oil until onion is tender (about 3 minutes) then remove from heat. In a blender, puree 2 cans beans, drained and rinsed, with chicken style broth (may have to do this in batches), then add to onion mixture. Stir in remaining beans, salsa, and lime juice. Heat mixture to a boil, then reduce heat to low and simmer for 30 minutes.
