Colorful Confetti Salad-Raw Dish
4 cups broccoli florets
4 cups cauliflower florets
1 red bell pepper diced fine
1/2 cup lemon juice freshly squeezed
4 cloves garlic
1 Tbsp Celtic sea salt
3/4 cup olive oil
Chop the broccoli and cauliflower into very small pieces or process in the food processor with the "S" blade and then place in a large bowl. Chop the red bell pepper into small pieces and add to the bowl. Blend the lemon juice, olive oil, and sea salt and garlic cloves in a blender until smooth. Pour dressing over the broccoli, cauliflower, and peppers. Let marinate for 1-2 hours before serving. Enjoy as a salad or serve over a bed of greens.
