Corn Chowder
6 cups water
1 med onion, diced
1 Tbsp Olive Oil
2 Tbsp Chicken-style seasoning
2 tsp Herbamere seasoning
Handful fresh parsley, chopped
1/4 tsp cayenne powder
3 lb potatoes, peeled & chopped
2 large carrots, peeled & chopped
2 ribs celery, diced
4 cups frozen corn (32 oz bag)
1 cup cashews
1 cup water
Saute onion, carrot & celery in olive oil in bottom of large saucepan until onion is clear. Add seasonings, except chicken-style seasoning & fresh parsley. Bring 6 Cups water to a boil & add the chicken-style seasoning then add to onion mixture. Add potatoes & bring to a boil. Simmer until potatoes are soft. Add corn. Blend cashews in 1 cup water until creamy & smooth (rub between fingers to make sure it is not gritty). Slowly add cashew milk to soup. Add fresh parsley & bring to slow boil.
