Garden Fresh Minestrone Soup
3 medium leeks
3 Tbs olive oil
2 cloves garlic, minced
2 cups cabbage, shredded
6 cups vegetables
1 can tomatoes with green chilis
1 can tomatoes, crushed
1 can black beans
1 can northern beans
1 can kidney beans
1/4 cup tomato paste
1/2 tsp oregano
1/2 tsp basil
1/2 tsp rosemary
2 bay leaves, remove before served
1/2 cup elbow macaroni, uncooked
8 cups vegetable broth
In a 6-8 qt kettle, cook leeks and garlic in oil for 5 minutes. Add vegetable stock, all beans, and spices. Bring to a boil, then simmer for 30 minutes. Stir in tomato paste and macaroni, simmer until pasta is tender. Add shredded cabbage and cook only until it wilts. Add additional seasonings if desired.
