Gazpacho Soup-Raw Dish
5 -6 large fresh tomatoes
1/2 large yellow bell pepper, chopped small
1/2 small red onion, thinly sliced
1 small (or 1/2 large) cucumber, peeled, seeded, chopped
1 jalepeno pepper, stemmed, seeded, and finely diced
1/4 cup fresh basil or flat leaf parsley or combination of the two
3 Tbsp lime juice, freshly squeezed
2 Tbsp olive oil (optional)
3 Tbsp Balsamic or Red Wine Vinegar
pinch white pepper
dash Bragg's Liquid Aminos or Nama Shoyu or Celtic Sea Salt (your preference) to taste
dash cayenne (optional)
dash garlic powder (optional)
Cube (small) and set aside 2 tomatoes, bell pepper, & cucumber
Slice red onion
Puree remaining tomatoes
Add vegetables to pureed tomatoes
Stir in seasonings ( basil, parsley, jalepeno, vinegar, lime juice, etc.)
Refrigerate and serve cold. This is even better the next day ~ if there is any left!
For easy prep, you can just put the vegetables in the food processor and pulse. You can also adjust the quantities of the vegetables as you wish to your taste. I generally make a large batch so I have enough for 2 or 3 days, but I warn you it is so addicting ~ YUMMY!
