Potato Supreme Soup
1 Tbs
Olive oil
1 onion, chopped
2 garlic cloves, chopped
2 celery stalks, chopped
6 cups water, approx.
8 potatoes, cubed
2 Tbs Nutritional Yeast flakes
1 tsp chicken-style seasoning
1 tsp celtic salt
1 tsp celery powder
1/4 tsp white pepper
1/2 cup cashews, raw
3 Tbs flour
1/4 cup parsley, fresh, minced
Saute onions garlic and celery in a little water, until tender. Add potatoes and seasonings with enough water to cover and simmer until potatoes are soft. In a blender, process cashews with 1 C hot water until completely smooth and creamy. (when rubbed between fingers there should not be any grittiness) Add to potatoes and stir until well blended. Combine flour with a small amount of water and mix until smooth. Stir into soup and cook until thickened. Garnish with fresh parsley, etc.
