Red Pepper Hummus
1 3/4 cups chickpeas, (15 oz. can)
1/2 red bell pepper, diced
3 Tbs tahini
2 Tbs lemon juice, fresh
1 clove garlic, halved
2 tsp coriander, ground
1 tsp cumin
1/8 tsp cayenne pepper
In food processor or blender, add all ingredients and process until smooth. If mixture is too thick, blend in 1-3 Tbsp water to create desired consistency (thick for sandwich filling or thin for dip). Taste and adjust seasonings as desired. Serve with warm pita triangles; stuffed into pitas with lettuce and tomato, or with cut up raw veggies.
